60% Chardonnay, 40% Viura.
Alcohol :12,5 %.
Elaboration : The grapes come from vineyards owned by the winery in
Grávalos, at an altitude between 700 and 800 m. above sea level. The
harvest was done in mid-September withj the variety Chardonnay and
early October with the Viura variety. Fermented in fine American oak
barrels of 225 liters. Once fermented and remained with the lees until
mid-March with the lees being removed "batton" earlier every day and
more sparsely after. The tirage was done the last week of April.
Tasting Note: Straw yellow, greenish and gold. Fine bubbles, forms
rosaries and a good crown. Aromas of ripe fruit, smoky, toast and
vanilla from the cask. Weil homogeneous strong and flavorful with a
soft end point of acidity that makes it very pleasant.
Food Match : Hot and cold starters, oysters, game, fresh foie gras.
Goes weil with almost all dishes.
