Cépage : pinot noir
Sols : Argilo-calcaire
Vinification : Récolte manuelle, tri sélectif des raisins, égrappage total. Macération pré-fermentaire à froid (6-8°) de 5 à 8 jours. Cuvaison en cuve inox avec chapeau immergé, pas de pigeage mais délestages et remontages pendant la fermentation. Fermentation à température contrôlée (25-28°). Macération totale de 15-20 jours. Pressurage pneumatique pour obtenir le vin de presse.
Elevage : Elevage en fûts neufs sur lies fines pendant 12 mois, puis pendant 4 à 6 mois en fûts d'un vin.
Note de dégustation
Œil : Pourpre profond avec des reflets rouge cerise.
Nez : Franc, des arômes de cerise kirshée, de framboise de violette donnent une impression de rondeur. Des notes grillées apporte une touche de jeunesse.
Bouche : Attaque franche et tanique. Des notes de figue, de myrtille et de cerise kirshée apportent une touche chaleureuse. Finale longue et tannique.
About the winery
Located at Chateau de Chassagne our compagny was etablished 1951 by Louis Félix Picard who then owned 2 hectares of vines in Chagny.
His son joined him a few years later Michel Picard left school when he turn 15 at his father reaquest
to help him with his everyday ask:wine work wine making, wine producing and marketing.
We have kept the Peugeot motorcycle which Michel Picard used to travel throughout Burgundy when he first started work, meeting the people and getting to know the whole region intimately. It is now preserved at Chateau de Chassagne Montrachet as a symbol of how far his company has come.
In the early seventies, he took over the family operation, with the help of his wife Liliane, who is also born in a family of winemakers.
Francine and Gabriel, his children, joined him in the late nineties.
