The ripe, concentrated fruit was handpicked and vinted in small batches using
traditional methods. During fermentation, gentle plunging of up to 3 times per day ensured the desired level of colour extraction, structure and aroma compounds. Ferments peaked at above 300C. Following ferment dryness there was a period of up to 10 days post ferment maceration, and the wine was then drained to French oak barriques (50% new) for 14 months. Malolactic fermentation concluded in the spring and the wine was blended, received no fining, and one gentle filtration before bottling in July 2007.

The ripe fruit was handpicked and vinted in small batches using traditional methods. During fermentation, gentle plunging of up to 3 times per day ensured the desired extraction of colour, structure and aroma compounds. Ferments peaked at above 300C. Following ferment dryness there was a period of up to 10 days post ferment maceration, and the wine was then drained to French oak barriques (30% new) for 10 months. Malolactic fermentation concluded in the spring and the wine was blended, receiving one gentle filtration before bottling in March 2007.

Great fruit comes through when warmer. On palate, guava… and other exotic fruits. It’s rich and limey and striking and long. A little bit of oak – a nice rich margarine character; some opulence. Impressive – worth the money. A great label, which will help the wine!

this wine displays enticing aromas of rose petal, tropical fruits and a touch of musk. The palate is harmoniously textured with a lingering richness. Fermentation was stopped before completion to achieve a medium style
