About the winery
Bodegas San Dionisio (founded in 1957) is situated in the south eastern Spanish town of Fuenteálamo in Albacete (Castilla – La Mancha). For centuries, from generation to generation our wine makers have developed cultivation techniques that have lead to our taking full advantage of the exceptionally hard conditions of our climate and our soil so that from a meagre production ( 3.000 kilos per hectare) and a slow ripening process ( our most common variety – Monastrell – is harvested at the end of September and all of October) we are able to produce very complex wines with a strong personality, with a high concentration of aromas and polyphenols, in which the qualities of Monastrell are fully brought out and complemented by the other varieties of grape that are also present in our vineyards, such as Tempranillo (Cencibel), Cabernet Sauvignon, Garnacha, Merlot, Syrah, Petit Verdot, Macabeo, Chardonnay and Airen.
The most advanced fermentation techniques controlled by cooling, micro-oxygenated are used in order to improve the evolution of the tannins and to maintain a stable colour. The prolonged fermentations in horizontal rotary vine vats bring out the maximum quantity from the pulp in stainless-steel tanks. Our wines are then transferred to barrels are made from American, French and other Eastern Europe oak and aged in our cellars under optimum temperature and humidity conditions.
