La famille Hervé retrace sa généalogie jusqu'en 1607 lorsque Jean-Marie Hervé, marin breton au service du roi de France, vint en fin de carrière poser son sac à terre dans la paroisse de Saillans. Depuis lors, les Hervé et leurs alliés ont donné à la commune quantité d'élus, maires ou conseillers municipaux.
C'est un tonnelier du nom d'Edmond Olier qui replanta le vignoble après sa destruction par le phylloxéra. La première mise en bouteille au Château remonte à 1890, ce qui est certainement un record en fronsadais. Le gendre d'Edmond Olier, Raoul Hervé, contribua à la bonne notoriété du cru entre les deux Grandes Guerres. C'est son arrière petit neveu, Jean-Noël Hervé, qui se passionne aujourd'hui pour la destinée du Château Moulin Haut Laroque. Il maintient son vignoble à un âge canonique.
Un tiers des vignes a plus de 45 ans ! Les rendements à l'hectare s'en trouvent très sensiblement réduits par rapport aux normes habituelles, mais la qualité s'en ressent grandement. Le domaine viticole s'étend à cheval sur les communes de Saillans et de Fronsac, sur un tertre dont il couvre sur 360° le mamelon culminant. Il s'agit bien ici d'un micro climat typique.
Placée sous le contrôle oenologique de Michel Rolland et de Christian Very, la vinification se fait dans la perfection et le respect des traditions.

Presentation of the winery
The roots of the Hervé family can be traced back to 1607 when Jean-Marie Hervé, a sailor from Brittany serving the king of France, disembarked once and for all at the end of his career to settle in the parish of Saillans. Since then, the Hervé family and their allies have given the town a countless number of elected representatives, mayors or town councillors.
It was a cooper by the name of Edmond Olier who replanted the vineyards after they were wiped out by phylloxera. The very first château bottling dates back to 1890, which is almost certainly a record in the Fronsac region. Between the two World Wars, Edmond Olier’s son-in-law, Raoul Hervé, contributed to the excellent reputation of the wine. Today, it is his great grand nephew, Jean-Noël Hervé, who passionately devotes all his energy to the future of Château Moulin Haut Laroque, making a point of maintaining the age of the vineyard.
One third of the vines are over 45 years old. The yields per hectare have been considerably reduced in relation to normal standards, much to the benefit of quality. The vineyards straddle the communes of Saillans and of Fronsac over a hillock the top of which is totally covered by vines which benefit here from a genuine, typical micro-climate.
Vinification, under the oenological control of Michel Rolland and Christian Very, is performed with an eye to perfection and with due observance of long-standing traditions.
