Presentation of the winery
In August of 2006, Francesc Grimalt and Sergio Caballero set up 4Kilos Wines in Mallorca, a company dedicated to producing wines that reflect the strength of the grape and its nuances but with a different approach and different presentation.Francesc Grimalt, winemaker and former partner and technician of the Anima Negra Cellar in Mallorca, is known mainly for rescuing the variety of the native grape Callet on the Balearic wine scene. Sergio Caballero is musician and founding partner and co-director of the Sonar festival of advanced music and multi media arts, and who is responsible for its image.
In late September of 2006 in the garage of a fellow winegrower and with few resources but with excellent grapes, 4kilos produced its first wine.The fermentation and maceration of the wine was undertaken in milk refrigeration units, which thanks to their form create a large, surface area of skin pulp. The remaining 50% is produced in open barrels of 225. The wine was raised for fourteen months and was launched onto the market in May 2008.
In 2007 alongside Apolonia Viticultors (Balearic Agrarian society) they converted a former sheep farm into a small winery. There they were able to produce the crop for 4Kilos 2007 and their new project 12Volts 2007 that after twelve months in the barrel will be launched onto the market at the beginning of 2009.
Their work in the cellar is not subject to fixed rules, every year it will change due to the harvest type. Firstly the grape is hand selected on entering the cellar. The alcoholic and malolactic fermentation can be undertaken in both oak and stainless steel barrels. The duration of crianza in wood, the type of oak, barrel capacity and age of the barrel could vary according to vintage.
Their concept is not only that of variety but of the importance of the combination of strain-soil-climate-growth. From the offset they have been supported by winegrowers, very important when attempting to make rational viticulture and respect the environment. In many vineyards native vegetation cover is used in order to obtain more concentrated grapes, better ground porosity and increased microbial population.
The vineyards are located in different parts of the north and south of Mallorca, the reason for which being that they do not belong to any particular D.O. The strains are planted mostly in soils ‘Cal Vermell’ a popular name to describe the Franco clay soil. The varieties that are grown are Callet, Cabernet, Sauvignon, French Fogoneu, Merlot, Monastrell and Shyra.
The name 4Kilos comes from the initial investment in the anterior currency of pesetas by both partners, which is to say, 4 million pesetas. A modest investment for this sector which demonstrates that a good wine does not depend on a great economic effort but an ambition for quality and a passion for the product. 4Kilos is unmistakable in its signature and a declaration of principles.

En agosto del 2006, Francesc Grimalt y Sergio Caballero crean en Mallorca “4Kilos Vinícola”, una empresa dedicada a elaborar vinos que reflejen la fuerza de la uva y sus matices, pero con un enfoque y presentación diferentes.
Francesc Grimalt es enólogo y antiguo socio/técnico de la bodega Anima Negra en Mallorca. Él es conocido principalmente por haber rescatado la variedad autóctona de la uva Callet, en el panorama vinícola Balear. Sergio Caballero es músico, socio fundador y co-director del festival de música avanzada y arte multimedia SÓNAR, del cual es responsable de su imagen.
A finales de septiembre de 2006, en el garaje de un amigo viticultor y con pocos medios pero con una gran uva, elaboraron su primera producción vinícola: “4Kilos 2006”. La fermentación y maceración del vino se realizó en depósitos refrigeradores de leche que, gracias a su forma, generaron una gran superficie de contacto piel-mosto. El restante 50% se elaboró en barricas abiertas de 225l. El vino tuvo una crianza en barrica nueva de roble francés de catorce meses y su salida al mercado se realizó a finales de mayo de 2008.
En 2007 junto a Apolónia Viticultors (sociedad agraria balear) reconvertieron en una pequeña bodega un antiguo establo de ovejas situado en las afueras de Felanitx. Allí pudieron realizar la cosecha de “4Kilos 2007” y su nuevo proyecto: “12Volts 2007”, que tras 12 meses en barrica saldrá al mercado a finales de 2008.
Su trabajo en la bodega no está supeditado a reglas fijas, cada año cambia dependiendo del tipo de cosecha. Primero seleccionan a mano la uva en la entrada de bodega. La fermentación alcohólica y maloláctica pueden realizarse tanto en roble como en acero inoxidable. La duración de las crianzas en madera, el tipo de roble, capacidad de las barricas y edad de la barrica pueden variar según la añada.
Su concepto vitícola no es solo un concepto varietal sinó que lo importante para ellos es el conjunto cepa-suelo-clima-viticultor. Desde el principio, han contado con el apoyo de los viticultores, muy importante cuando se pretende realizar una viticultura racional y respetuosa con el medio. En muchos viñedos, utilizan la cobertura vegetal autóctona con el fin de obtener uvas más concentradas, mejor porosidad del terreno y mayor población microbiológica.
Las viñas se encuentran situadas en distintos municipios al sur y al norte de Mallorca, motivo por el cual no pertenecen a ninguna D.O. Las cepas, están plantadas en su mayoría en suelos de “Call Vermell”, nombre popular para denominar los suelos franco-arcillosos con abundante óxido férrico. Las variedades que cultivan son Callet, Cabernet Sauvignon, Fogoneu francés, Merlot, Monastrell y Syrah.
El nombre de “4Kilos” proviene de la inversión inicial en pesetas de sus dos socios, es decir: 4 millones de pesetas. Una inversión modesta para este sector, que demuestra que un buen vino no depende de un gran esfuerzo económico sino de una ambición por la calidad y una pasión por el producto. 4Kilos es su firma inconfundible y una declaración de principios.
