Vineyard: Clay-like soil. Cultivation system is Guyot; 9 fruit buds per plant.
Harvest: September. Winter pruning and harvesting still done entirely by hand.
Vinification: The vinification is the classic “white vinification”, with reception of the first grape-juice with soft pressure by pneumatic presses, static removal of sediment and fermentation at controlled temperature.
