Vinexus - Infinity of Wine Duitsland : « The Selaks story is one of pioneering spirit and discovery, the coming together of time honoured craftsmanship and winemaking innovation. Light yellow in colour, this wine has a bouquet of grapefruit and passionfruit, with a hint of nettles. The palate is delightfully crisp and dry with flavours of ripe grapefruit, passionfruit and melon. Vinification: New Zealand enjoyed a particularly long, dry summer in 2008. Favourable weather patterns throughout flowering and fruit set provided good crop quantities, with drought conditions ensuring superior ripening and flavour development throughout all grape growing regions. The fruit for this wine was sourced from premium vineyards sites throughout Marlborough. The grapes were grown on a variety of canopy training systems, utilised to promote a complexity of aromas and flavours. Uniform ripening was achieved through close attention to soil moisture levels and maximum sunlight penetration throughout the canopy. Upon harvesting all fruit was crushed and destemmed, with the utilisation of 25 tonne tipper tanks allowing more efficient processing of the grapes, with minimum handling. After crushing the juice was given several hours of skin contact to aid in the extraction of flavors. Batches of juice were inoculated with a range of Saccharomyces Cerevisiae yeast for the purpose of creating a greater flavour spectrum in the resulting wine. Fermentation was slow and cool, promoting maximum aroma and flavour extraction. The wine was blended, cold stabilised, fined and sterile filtered prior to bottling.Colour: bright yellow in colour with brilliant clarity.Nose: A bouquet of grapefruit and passion fruit, with a hint of nettles. Palate: A classic New Zealand Marlborough Sauvignon Blanc, combining time honoured craftsmanship and winemaking innovation. The palate is delightfully crisp and dry with flavours of ripe grapefruit, passionfruit and melon. This wine has excellent structure and balance, with fresh, tangy acidity and a generous finish. »

Vinexus - Infinity of Wine Duitsland : « Tasting Notes: An assertive wine. Aromas of ripe stonefruit, pears and apples accost the senses before the first glass reaches the nose. The palate is packed with flavour and texture showing hints of melon and dried tropical fruits. This wine has excellent structure and weight. Vinification: A period of skin contact after crushing is mandatory to achieve the weight and texture we desire, as a consequence of this approach we often see a pink hue develop in the wine. Long cool fermentation conditions in Stainless Steel tanks have allowed the elusive fruit characters of this wine to come through.The Vintage: This season can most accurately be described as a game of two halves. The period leading up to and including flowering was the coldest on record resulting in poor fruit set and very low yields. The second half was a true Indian summer, long warm sunny days, cool clear nights, and no rain for months. Perfect ripening conditions. This Pinot Gris is drier in style than most, as such we tend to look toward the European continent rather than Pacific Rim when trying to match with food styles. " »
