Wine.com : « Red Wine by Foradori from Trentino-Alto Adige, Italy. Elisabetta Foradori has become one of Italy's top superstar winemakers. Without a doubt, she is Italy's finest producer of wines made from the Teroldego grape variety, one of the country's oldest and finest traditional grapes. The Teroldego grape is genetically related to Syrah, and here in the northern Trentino's mountain valleys it reaches its zenith in the subzone known as Campo Rotaliano. All the Foradori vineyards lie in the side valley of Campo Rotaliano, and it is from these beautiful vineyards that Elisabetta Foradori is quietly producing some of Italy's most complex, deep and compelling red wines. Granato is her top of the line bottling: it represents the finest selection of Teroldego in the Foradori holdings, and is built to age gracefully for many years. This bottling is aged in small oak casks for twelve to fifteen months, seventy percent of which are new (though lightly toasted) oak. Granato from Foradori is one of the great, unsung brilliant wines of Italy, and is a perennial winner of Gambero Rosso's coveted Tre Bicchieri award. »

Vinexus - Infinity of Wine Duitsland : « A medium hue with a very rich bouquet that gives the clear impression of having found a wine of conspicuous harmony. A wine that after several years of cellaring will become a very particular experience. Color: Straw-yellow to golden yellow Bouquet: A strong bouquet of ripe fruit with a variety of aromas (apricots, tropical fruit, vanilla) Flavor: Strong, balanced and savory. An interesting play of acidity in the mouth, harmoniously juicy and rich with a pleasant fullness. This wine, full of character, comes from selected individual vineyards stocked with vines grafted to slow growing rootstock and trained on wire trellises (Guyot) or on the pergola. The grapes of this cuvée grow under the best conditions on the valley floor around the village of Cortina . The favorable location of the vineyards, the ideal amount of sun, and the fine ventilation of the vines assure the ripening of grapes of exceptional quality." »

Bouquet: a strong bouquet of ripe fruit with a variety of aromas (apricots, tropical fruit, vanilla). The grapes of this cuvée grow under the best conditions on the valley floor around the village of Cortina . The favorable location of the vineyards, the ideal amount of sun, and the fine ventilation of the vines assure the ripening of grapes of exceptional quality. Vinification: The grapes are crushed and the stems are removed in a pneumatic tank press. Before being pressed, an 8 hour long cold maceration takes place in order to enhance the fruitiness of the wine. Afterwards, the grapes are gently pressed and clarified through the natural settling of sediments. 2/3 of the alcoholic fermentation is carried out in stainless steel tanks with select strains of yeast. 1/3 of the fermentation is carried out in small casks of French oak which, as a result of the six months of aging and the ripeness of the yeast, grants this special wine an increased level of complexity and refinement. After the bottles with their highly modern design are filled, an extended period of aging takes place before this unique white wine is allowed to be released to the market. »

Vinexus - Infinity of Wine Duitsland : « A wine of conspicuous greatness, it presents itself as compact and very concentrated with a wide palette of varietal characters. Color: deep, compact garnet red. Bouquet: the aromatic variety is characterized by violets, bitter chocolate, tobacco, black pepper, and notes of freshly cut grass. Flavor: powerful, dry, solid structure with a lengthy, lasting flavor. This wine, full of character, comes from selected individual vineyards stocked with vines grafted to slow growing rootstock and trained on wire trellises (Guyot) or on the pergola. The grapes of this cuvée grow under the best conditions on the valley floor around the village of Cortina . The favorable location of the vineyards, the ideal amount of sun, and the fine ventilation of the vines assures the ripening of grapes of exceptional quality. Vinification: The stems are removed from the grapes immediately upon arrival. After a one day cool maceration in order to improve the fruit bouquet, the wine is fermented at a constant temperature of 28-30° C (82-86° F) for about 10 days. During fermentation, the must is kept in regular contact with the skins through circulation pumping and gentle pressure from below. In this way, we achieve ideal results with the coloring from the skins and emphasize the fruitiness of the wine. After two gentle rackings, 2/3 of this cuvée is aged for over 12 months in large oak barrels, the remainder in small casks of 2 year old French oak (barriques). This is followed by further maturation in large oak barrels and six additional months of aging in the bottle. Only then will this wine find its way into the hands of the buyer who, although now in possession of an adequately aged and balanced wine which can be enjoyed immediately, will nevertheless be able to impart the cuvée Cortinie additional completeness with several years of cellaring. »
