Vinexus - Infinity of Wine Duitsland : « Rosy color, with shades of cherry. Refined, elegant aromas, with hints of blackcurrant and cherry, following through to a soft, sapid palate, with good acidity and a fruity aftertaste, easy-to-drink. History: The wine was named Cipresseto in 1998, a name that underlines its Tuscan character. It was one of the first rosés produced in Italy and is produced according to the philosophy of quality at every level. This wine represents a concrete example of the ability to produce the best quality possible for the price. Climate Vintage: Hard work was needed in the vineyards, after a very wet spring, to ensure a regular development of the vines, especially during the period of flowering. The summer was mostly dry, improving the balance of aromas, sugar levels and acidity. The harvest took place in good weather, during the first ten days of September and the grapes were healthy and perfectly ripe for this type of product. Vinification: The grapes were de-stemmed, crushed and gently pressed. The must was cooled to a temperature of 10°C to aid natural clarification and transferred into temperature controlled, stainless steel vats, where alcoholic fermentation took place at a temperature no higher than 15°C. The wine was then racked into stainless steel vats and stored briefly at a temperature of 10°, in order to preserve the typical aromas before bottling. " »

Vinexus - Infinity of Wine Duitsland : « Lively pink color. On the nose the aroma is lightly fruity with hints of pear, banana, berries and a gentle note of violet. Elegant body, good structure well balanced with a fine acidity. Lovely extensive finish. The contrast between its capricious pastel color and austere Tuscan character make it the perfect year-round aperitif, though it also pairs well with salads and lighter fare. Vinexus - Infinity of Wine Duitsland : « Some wine lovers might think it absurd to utilise the best sangiovese grapes to make a rosé of Castello di Ama. But that source has been, right from the beginning, the secret of the utter pleasure this wine brings. A crisp wine with rich nuances of tropical fruit, displaying the elegance that is born in superbly-exposed hillside vineyards, our Rosato conjures up the fragrances of a spring day in Ama. Vinification: As our best quality sangiovese began fermenting, we bled off several hectolitres of must, deep rosé in hue since it had enjoyed some 12 hours’ skin contact. It was then fermented at about 18-20° without the skins. After careful tasting of the various lots, we decided to allow 40% to undergo malolactic fermentation. We made a final blend of these lots in December 2008 and bottled the wine at the end of January 2009. We produced 1.690 half bottles and 58.000 bordeaux bottles. Vineyard profile: The terroir that yields Castello di Ama’s Rosé is the same that yields its Chianti Classico. These vineyards were planted between 1964 and 1978, trained partly to vertical trellis and partly to Open Lyre. The wine, 90% sangiovese and 10% canaiolo, gains its considerable body from bleeding-off (saignée) lots that will produce Chianti Classico for this reason, the resulting wine is closer to a young red wine than to a white. Excellent structure and good holding potential over time are its principal qualities. But its fresh approachability, a hallmark of wines from fully ripe sangiovese, and the lushness of its fragrances combine to ensure that our rosato can be appreciated right from its first months in the bottle. »
