Vinexus - Infinity of Wine Duitsland : « Pale gold with amber tints, fine bubbles and crystalclear. Fruity bouquet with fresh honey. Fullbodied with long lasting aromas. Fresh and classy and well balanced, this wines evident harmony derives from the elegant blending combined with a most successful maturation. Vineyards : Selected exclusively from Saumur’s AOC vineyards Wine making : Grape pressing is monitored at the vineyard. The grapejuice is delivered directly to our cellars. First fermentation is conducted in thermo regulated stainless steel vats. Maturation : The wines are racked, chilled to stabilize and filtered before bottling Second fermentation : After blending of 25% of the best wines from each lot, the cuvee is bottled for the second fermentation in our limestone cellars following the traditional method. The bottles are riddled to settle the lees in the bottleneck. The lees are then removed in the characteristic process of freezing and disgorging. The wine is dosed as brut. Total process : 24 months. »
