Vinos de Bulgaria, S.L. : « "A dry red wine, a blend of Cabernet Sauvignon (50%) and the autoctonous Bulgarian variety “Early Melnik Vine” (50%) - it is cultivating exclusively in Southern Bulgaria; there are only 80 Hectares of this unique grape variety worldwide). Harvesting date: 25 Sept. (Early Melnik Vine) and 09 Oct. (Cabernet Sauvignon), respectively. A 2-stage selection of the healthy grape clusters – firstly on the vine massif and secondly on selection tables at cellar´s premises. The maceration had run for 18-25 days. The fermentation has taken place in stainless steel vats at 25-30ºC. 12 months ageing in French and Bulgarian oak barrique barrels followed by further 6 months of bottle-ageing before the market launch of this wine. The colour is of sour cherry, dark and deep. It could be also described as brilliant and lively ruby colour. Aromas of green pepper, licorice, and cocoa; with a slight hint of cinnamon. The wine also expresses aromas of black cherry, mulberry, raisins, wild raspberry, chocolate, vanilla, and evokes impressions of tobacco and spices. The palate is robust, powerful, direct, silky, mouth-filling (round), of multiple layers, long-lasting, and fleshy. It is a fantastic wine! Wine for connoisseurs! Best before: 2018. Food match: roasted meat in sauce, grilled meat, red meat and game, dishes abounding in spices, cured cheeses. Serving temperature: 18ºC." »

Vinos de Bulgaria, S.L. : « "A dry red wine, a blend of Cabernet Sauvignon and Merlot grape varieties. Very dark and intensive purple-scarlet colour. An elegant aroma of green pepper and black fruits (mulberry) as well as a classy touch of vanilla. A complex nose manifesting aromas of classic cassis and a hint of mint. Tobacco and smoky notes are also present. The palate is round, tasty, with a lingering aftertaste of chocolate. Fine tannins and very well integrated too – they allow the fruity aromas of the wine to show off. Ageing in new French oak barrique barrels for 18 months. The wine is ready now for consumption although it will improve significantly in about 4 to 6 more years of ageing. Best before: 2020. It is recommendable to decant it before serving. A traditional French vinification technology has been applied aiming to foster and to highlight the traditional Bulgarian characteristics proper to this type of wine. As a result there is a very elegant and velvety style exhibiting wine´s “terroir” (rocky soil). Maceration lasts for 10-14 days, at 8-12ºC. Cold maceration: 7-12 days. Fermentation had run at 25ºC. Malolactic fermentation and the ageing had taken place in new oak barrique barrels under controlled temperature. Best before: 2020. It is recommendable to decant the wine before serving. Food match: roasted meat in sauce, grilled meat, red meat, cured cheeses. Serving temperature: 18ºC. Highest quality natural cork stopper." »
