A classy and complex Champagne
Light golden in colour with small bubbles, aroma's of apricot and toasted brioche on the nose. An elegant and complex wine with a rich mouth feel and layers of stone fruit (ripe apricot, white nectarine), brioche, carree confiture and macadamia and a very long finish. Very morish!! #bollinger #champagne #fullbodied

The NV Brut Special Cuvee opens with elegant, well-delineated aromas of honey, brioche, roasted nuts, orange zest, flowers and peaches, of which appear on the palate in a classy, finessed expression of the house style. This is an especially refined and delicious NV Champagne. The Special Cuvee is roughly 60% Pinot Noir, 25% Chardonnay and 15% Pinot Meunier (2004, 2003) sourced from a variety of vineyards. Bollinger adds 5-10% of reserve wines (in this case from 1995 and 1996, aged in magnums) which gives this offering its lovely complexity. The dosage is 7-9 grams per liter.

Exudes honey, with richness and a supple texture. Peach, biscuit and dried orange peel notes add complexity, and the wine glides to a long, lingering aftertaste of honey and brioche. Drink now through 2012.
2004 - Complex aromas and flavors of rose, grilled nuts, citrus and a gently oxidative note course through this muscular, full-bodied bubbly. Despite its power, there's a gracefulness. The aftertase combines citrus and spice. Drink now through 2008. 10,000 cases imported.
2003 - A beautiful Champagne. Complex and elegant, evoking ginger, jasmine, citrus and honey aromas and flavors, accented by a biscuit and grain component coming as much from barrel fermentation as yeast aging. Very firmly structured and long. Enjoy with Asian foods or Parmesan cheese. Drink now through 2006. 9,500 cases imported.

Non-Vintage by Bollinger from Champagne, France - regions. The denomination Special Cuvee was created in 1911. The idea came from William Folks, then partner of the illustrious London House of Mentzendorff. This great wine lover felt it was an insult to simply call this great wine non vintage. The suggestion of naming it Special Cuvee was immediately approved by Monsieur Bollinger. A blend par excellence, the Special Cuvee is the purest expression of the Bollinger style: of its craftsmanship and its singular conception of what a champagne should be. It is, therefore, on this wine that the House of Bollinger shows how it is different from other Champagne Houses, asserts its qualitative policy and by which it asks to be judged.
Millé    Millé
Bollinger is one of the noblest houses of Champagne and is adored by its followers for its unique, powerful style. Selected from 30 highly rated villages, the juice for this bottling undergoes its first fermentation partly in oak barrels. Pinot Noir, which provides depth and power, accounts for 60% of the blend, an unusually high percentage for a non-vintage Champagne. From aroma to finish, Special Cuvee is profound, rich and imposing, with its signature nutty-toastiness, full body and authoritative backbone of acidity.
