We all need wine to cook with. And they say that if you put in bad wine you will get a bad result in the dish. Well, be that as it may, I do wonder if putting real Champagne in a sauce for a turbot (one of my favourite dishes) makes the end result ANY different than say putting in something like this from Leader pPrice at less the 2 euros. I wager that there are not more than one in a million superchefs, MWs, or connoisseurs of decent grub who would tell the difference! And how many million of those are there? Well, a lot fewer than one, so we are talking of a fraction of one person only, if you get my drift.
Thinking to make a Mouclade de moules, fat Spanish mussels with a saffron cream sauce fortified with a reasonable white, I happened upon this Côtes de Gascogne. Perfect! and the rest to be drunk with that delicious flagship of the Charente cuisine. Did you know they grew the saffron crocus in the Charente?
