Cépage : pinot noir
Sol : argilo-calcaire
Vinification : Récolte manuelle, tri sélectif des raisins, égrappage total. Macération pré-fermantaire à froid (6-8°) de 5 à 8 jours. Cuvaison en cuve inox avec chapeau immergé, pas de pigeage mais délestages et remontages pendant la fermentation. Fermentation à température controlée (25-28°). Macération totale de 15-20 jours. Pressurage pneumatique pour obtenir le vin de presse.
Elevage : en fûts sur lies fines dont 10 à 30% en fûts neufs.
Note de dégustation
Œil : Robe Pourpre brillante.
Nez : Fin et gourmand, sur des notes de cerise et de violette Quelques touches de grillé et de cacao viennent sublimer un nez racé tout en finesse.
Bouche : Attaque élégante et fruité, bouche charnue et tannique à la fois. Les cerises noires sont accompagnées de tanins fin mais encore jeunes.
Finale légèrement toastée. Très belle longueur.
About the winery
Located at Chateau de Chassagne our compagny was etablished 1951 by Louis Félix Picard who then owned 2 hectares of vines in Chagny.
His son joined him a few years later Michel Picard left school when he turn 15 at his father reaquest
to help him with his everyday ask:wine work wine making, wine producing and marketing.
We have kept the Peugeot motorcycle which Michel Picard used to travel throughout Burgundy when he first started work, meeting the people and getting to know the whole region intimately. It is now preserved at Chateau de Chassagne Montrachet as a symbol of how far his company has come.
In the early seventies, he took over the family operation, with the help of his wife Liliane, who is also born in a family of winemakers.
Francine and Gabriel, his children, joined him in the late nineties.
