Château Olivier, a listed national landmark dating from the 12th century, is situated in a site of outstanding natural beauty just 11km from Bordeaux. The estate covers 220 hectares of which 52 are under vine in a single block on a south-facing gravely rise. Great care is lavished in the vineyard : bunches of unripe grapes are removed when necessary for maximum concentration, leaves are thinned out, grapes are sorted before crushing, and the wine is blended so that only the finest vats are sold under the prestigious great growth label. Château Olivier is a well-balanced wine of great finesse and elegance. The white wine is fermented and aged in barrel on its lees, which are regularly stirred. The red wine is fermented in temperature-controlled vats prior to ageing in oak barrels.
