Golden yellow with hints of dried raisens, apple cider and a bright citrus-flower acidity. Like bottled sunshine, this wine had everything you could ask for in an aged Cava. A vibrant mouthfeel which reflected the elastic acidity and flavours of vanilla pastry which developed into a rich and open lemon/apple tart. Delicatable and refined, bright and complex, it would pair perfectly with anthing topped with bernaise, or lemon cream sauce, rich cheeses and dried fruit or figs.
