| I have always believed that wood casks for white wine are necessary to get the oxygenation during fermentation but the wood needs to be porous and very ligth to avoid the killing of the variety characteristics, This wine, fermented in chesbut casks, is a good demonstration of a good wood use, The wine is full of mediterranean aromes with a very ligth touch of vanilla coming from the wood. It is long lasting in the mouth and I will advise to drink it not too cool to get the best of it. | |
