This little white from the Valais area, goldy with greeny shades, was indeed quite of a surprise. Made out of "Païen", a little-known grape variety barely exported out of Switzerland, this fruity and spicy yet crispy white was the perfect match with a nice local melted cheese.
When asked why Swiss wines of that kind (IE: a very good price ratio and a very interesting character) are note exported, a local winemaker answered: "we keep the best wines for ourselves and ship the rest". I would not dare saying he is right, though according to the little swiss wines I have tasted, it seems like there might be some kind of truth in his words. #paien #cheese #crispy #drywhite #fruity

Meaning on the maturity : This is not a wine that would age for decades. To drink within its first 4/6 years. However I would be curious to taste an older one.
