Situé au pied des contreforts de la Sainte Baume dans le Var, le Domaine de 12 hectares produit des vins issus d'une agriculture biologique. Nos méthodes de culture n'utilise aucun produit chimique.
Le vignoble est essentiellement composé de vieilles vignes qui ont pu s'épanouir dans des conditions d'ensoleillement maximum et bénéficient d'un terroir très riche. Un sol argilo-calcaire qui sied parfaitement aux vignes de cette région. L'ancien chai a été restauré et présente toutes les qualités d'un chai moderne avec des cuves entièrement refaites aux normes actuelles, des cuves thermo-régulées et des fûts de chêne pour l'élevage de nos vins rouges. Toutes les conditions sont réunies afin d'optimiser le travail de la vinification.
Classé AOC Coteaux Varois en Provence, notre vignoble se compose de cépages nobles tels que : Grenache, Cinsault, Carignan, Canernet-Sauvignon, Rolle, Ugni Blanc qui produisent des vins de grande qualité. Les vendanges manuelles sont réalisées, de fin septembre à début octobre, en caissettes avec une sélection rigoureuse. Les rendements sont ainsi volontairement maintenus à 20 hl/ha, soit nettement en-dessous des normes de l'appelation Coteaux Varois en Provence, fixées à 55 hl/ha.

Presentation of the winery
There are thousands of wines and yet not one is the same. A subtle blend of the actions of nature and man, each wine expresses the terroir as much as the inspiration of its creator.
Produced in the heart of "Provence vert", in the foothills of La Sainte Baume, our wines are of this same subtle blend: sun-drenched and nourished by an exceptional Mediterranean region. Worked with great finesse by Claire who loves to find in them as many nuances of colour as in her paintings. Carefully cultivated by Denis for whom quality owes nothing to chance.
The 12 hectares of vineyards are composed mainly of old vines that have flourished in conditions of maximum sunlight, a climate of Piedmont and soil of clay and limestone (region of "Provence limestone"). This rich soil is perfectly suited to the vines of this region. The vines are grown without any chemical treatment and the vineyard is being reconverted to organic methods.
Being classed AOC Coteaux Varois en Provence, the vineyards of les Vallons de Fontfresque are composed of the traditional grape varieties of the region: Grenache, Cinsault, Carignan, Canernet-Sauvignon, Rolle, Ugni Blanc, producing high quality wines. Yields are deliberately kept at 20 hl/ha, well below the standards of the appellation Coteaux Varois en Provence, set at 55 hl/ha. Harvesting of white and red grapes is done exclusively by hand over a period of 8 to 10 days, from late September to early October. Each bunch is carefully selected.
